did you try looking for a font that already exists?
Fancy > Eroded fonts | dafont.com
You can also choose a font you like and outline it. From there, place a distressed image inside the outlines be it a wood pattern or whatever. Works best in InDesign.
not really. but font packages dont have the same look as if you use xerox and textures that you make yourself. I can spot those cheap fonts a mile away, i know the gen public can as well. If you cant be genuine, i think its still important to throw in you own inconsistencies when you can.

Pick a chunky font. Like maybe Rockwell Extra Bold.
Find a woodgrain you like. Place it in a layer over the text.
Switch layers, select outside the text.
Switch layers and cut away the area.
Invert it.
I then ran the stamp filter over it until I got the look I wanted.
Then overlayed some color over it.
I'm sure there's a way to create a pattern in PS that does some of these steps for you but I didn't.
Does that method work for all letters or only Vs?
