Reproducing shades of the traditional tattoos on tshirts

Hello,
I'd like to print traditional tattoos on tshirts. The traditional tattoos have got particular shades, generally red and black like these:











I'd like to know how I can reproduce these shades in Illustrator/Photoshop and how print them (halftones/stochastic?)

I'm guessing stochastic would work to get that shading looking organic and fluid, IMO halftones look very mechanical compared to randomized shading.
