panorama is really cool. nin tap tap revenge fucking rules. recorder and math solver have been really helpful for school.

As for me, essential applications:
Simplify Media (stream your and your friends' itunes to your ipod -- best app around!)
Pro RSS (Great RSS feed reader)
Remote (control your itunes from your ipod)
VNC (fully control your computer from your ipod if on same network (good for shutting down the computer from bed, checking status of downloads etc.))
Air Sharing (bring pdfs, docs, xls files, jpgs etc. with you)
Facebook (yeah, it's facebook on the ipod)
Crosswords (with a premium account, you can get a dozen or so crosswords downloaded/day)

Essential games:
Rolando (best ipod game out so far)
Aurora Feint (like Puzzle Quest)
...if you dig that, Aurora Feint II: The Arena, Aurora Feint II: Tower Puzzles and soon Aurora Feint II: The Beginning
Dr. Awesome (it's like Qix)
I Love Katamari (recent patch makes it playable!)
Wurdle (addicting little game)
Trace (really charming little game. Kind of like N+ only slower paced and where you draw paths for your character)

Kind of ridiculous applications:
iNXES (Xbox Friends' list ala nXe updated with gamer scores, online status, etc.)
RockScores (Rock Band Scores application)
Groceries (I actually use this one a lot -- it groups your list into store sections, which is surprisingly useful)
Zippo lighter (it's free and a good show-off app)
