If the food is no more nutritious (it's proven not to be) and no more safe (it's proven not be) or no less harmful to the environment (it's proven not to be) than why would I pay more? In fact organics have been proven to be MORE HARMFUL in regards to contaminants in many cases.

Now, I might pay more for locally grown food because it is good to help local small business. I like that. I will pay a bit more for that when and if I can. THAT makes me feel good. But, I dont expect it's any better for me or the earth than the food I buy at the market. It's just better for small business. i am IN small business so I get that.

Every time I crack an egg now I take note of the interior skin thickness and try to ascertain if there is any discernible difference between a brown and a white. Thanks Mike.

Me and my wife walked past the farmers market and stopped to watch the catfish salesman bash the hell out of a catfish for a customer.

It's not about the skin so much as it's about how difficult it is to remove said skin and how much egg white that skin takes with it. Regular white eggs win every time.

your first paragraph is by no means absolute fact. where the food comes from, what conditions it was grown in, and if it's actually in season or not all have quite a bit to do with the foods nutrients and taste. the term "organic" really doesn't mean much when speaking of most foods bought at any large chain grocery, that much is very true. but, like i said, eating locally is paramount to all the organic craze. supporting local business is good for the obvious reason of supporting your immediate community, but it also cuts down on the extra energy spent on shipping whatever from whereever it's coming from. buying locally can be better for the environment, for a number of reasons. but they are also not absolute fact, although there are a few good reasons to help support the reasons behind doing it. mainly keeping things local. i can safely say that an in season tomato purchased from somewhere near your house will probably taste better than a tomato from columbia in february.
