convert a record into MP3s?
you need an audio imput into your machine, and some sort of recording program.
get a cable that can run from your stereo into your comp. cheap audio cable. then you need to find a program that can "record" that. i used to used Soundjam and it ruled, but then it went out of business, and never updated to OSX.
i've had limited success with Audacity. got that off of http://www.versionstracker.com... i haven't looked or tried that for a while.

RCA adapter will work for older equipment, or at least it did in my case.
